In the past, the province of Massa Carrara was at the crossroads of large thoroughfares (the Aurelia for the Romans, the Via Francigena in the Middle Ages) and the theatre of several invasion and occupations by the Romans, the Lombards, the Normans and different signorie between the XIV and the XVI century, then it was one of the first to join Napoleon's Republic.
This deeply affected the local diet but it also helped to build, as a sort of defence, a strong local identity, so that every village or city still has its own recipes, its own products and its vegetal and animal identities.
